Chocolate Oatmeal Cake With Walnuts

A friend recently reminded me of this delicious chocolate oatmeal cake recipe that I wrote years ago but is still to this day one of our favourites. This cake is so easy to make, the ingredients are simple and healthy, and its flavour and texture combination is simply amazing.

This juicy chocolate oatmeal cake with walnuts is naturally gluten-free and vegan, and can even be made without added oil. The recipe can be adapted to get a sweeter or less sweet result. In any case, it will be absolutely yummy.

Ingredients for the chocolate oatmeal cake

To make this super tasty chocolate oatmeal cake with walnuts, you will need the following ingredients:

  • oatmeal
  • walnuts
  • bananas
  • apple
  • coconut oil – for a version without added oil, it can be replaced with the same volume of smooth nut butter or tahini. Learn how to make your own nut butter with this easy homemade hazelnut butter recipe.
  • water or plant milk – to make your own plant milk, I recommend this easy homemade almond and hemp seed milk recipe. It works with other nuts and seeds too.
  • cacao powder
  • maple syrup or agave nectar – the added sweetener is actually completely optional. The cake batter will already be sweet from bananas and apples, so if you like the sweetness of it, you won’t have to add anything extra. If, on the other hand, you prefer your cakes a bit sweeter, this recipe tolerates a bit more maple syrup (it won’t mess up the consistency of the batter).
  • baking soda (bicarbonate of soda)
  • apple cider vinegar

One of the things that I absolutely love about this chocolate oatmeal cake recipe is that it is almost impossible to mess up – even if you swap some ingredients as I mentioned above, you will still get a really tasty result.

I also love how nutritious all the ingredients for this cake are. I sometimes take a couple of slices with me when I go on a hike or a trip in nature. It is also great to take to work and have as a snack or a dessert.

Of course, this delicious oatmeal chocolate cake will be perfect to simply have as a dessert after lunch or dinner. You can get creative and serve it with some homemade ice cream and some of this easy homemade plum jam without added sugar.

Chocolate Oatmeal Cake With Walnuts

An easy recipe for a super delicious and juicy chocolate oatmeal cake with walnuts. It is naturally gluten-free and vegan, made from high quality, healthy and nutritious ingredients.

Ingredients

  • 2 cups oatmeal
  • 1 cup ground walnuts
  • 2 ripe bananas
  • 1 large apple
  • 1/2 cup melted cold-pressed coconut oil
  • 1/2 cup water or plant milk
  • 4 heaping tbsp cacao powder
  • 2-3 tbsp maple syrup or agave nectar
  • 1/2 tsp baking soda
  • 1 tbsp apple cider vinegar
  • 100 g dark chocolate (optional)

Instructions

  1. Grind the oatmeal and mix it with ground walnuts, cacao powder and baking soda. 
  2. Blend all the other ingredients except for chocolate into a smooth liquid mixture and pour that mixture into the bowl with dry ingredients. 
  3. Mix it all together using a spatula, spoon or a whisk. If it is too dry, add some more water or plant milk. The mixture should be soft enough to be easily mixed with a spoon, but not liquid. 
  4. Transfer the batter into a baking tray and press some dark chocolate chunks into it for some extra chocolate flavour. 
  5. Bake at 180 °C for 35 - 45 minutes.
  6. Let the cake cool down before slicing.

Notes

The coconut oil in this recipe can be replaced with smooth almond butter, or other nut butter that is naturally soft and a bit runny. To make your own, follow this homemade hazelnut butter recipe.

Depending on how sweet you like your cakes, you can add some more maple syrup. Bananas and apples already contain naturally occurring sugars, and for my taste, this cake is perfectly sweet with the amount of sweetener written in this recipe.
