Strawberry Crumble Breakfast Cake (Sugar-Free, Oil-Free)

If you are looking for some cool breakfast ideas, this healthy strawberry crumble cake might be the perfect thing. Made only from natural, wholesome ingredients, this easy and delicious strawberry cake is naturally vegan, gluten-free, and without any added sugars or oils.

The recipe is fairly simple and doesn’t require any special baking skills. The ingredients you will need to make this super easy strawberry crumble breakfast cake are

  • ground oats/oatmeal or oat flour,
  • almond butter (you can learn how to make it at home in this post),
  • ground dried dates (also called “date sugar” – you can make them by dehydrating and blending dates, or buy in health food stores or websites),
  • strawberries, and
  • tapioca starch.

I really love how decadently delicious this strawberry crumble cake tastes, without having any processed ingredients in it. It can be enjoyed for breakfast and actually called “healthy”.

This kind of crumble cake is, of course, naturally crumbly and a bit messy, so it is good to have it in mind if you are in search of a nice and tidy dessert to serve to your guests. This is not it. It will crumble around while you slice it and look like this one on my pictures.

However, it can look cool if combined with something creamy and some fruits, and served in a bowl. I love the combination of this breakfast cake with some plain natural soy yoghourt and strawberry compote that I recently made (to make the compote, I simply cooked strawberries in some water and agave syrup).

If you’d like to slice this cake to appear a bit more tidy, it will be the best to let it cool down completely before slicing. But, even without the “perfect looks”, this strawberry crumble cake is well worth making because it is absolutely delicious.

Strawberry Crumble Pie (V, GF, Sugar-Free and Oil-Free)

With this recipe you can make a delicious strawberry crumble pie that is naturally vegan, gluten-free and without any added sugars or oils. Using only natural, wholesome ingredients, you will get a perfect breakfast, snack or a dessert.

Ingredients

  • 1 + 1/2 cup oat flour or ground oats (180 g or 6.35 oz)
  • 1 cup almond butter (250 g or 8.8 oz)
  • 1 + 1/2 cup ground dried dates (100 g or 3.5 oz)
  • 1/5 cup water (50 ml or 1.7 oz)
  • 1 kg strawberries (35 oz)
  • 3 tbsp tapioca starch (15 g or 0.5 oz)

Instructions

  1. Put the oat flour or ground oats, almond butter and 3/4 cup of ground dates into a bowl and mix to combine (the easiest way is to simply mix it with your hands).
  2. Add cold water and mix some more.
  3. Take a bit more than half of the batter and press it into a 20 cm × 20 cm (8 inch × 8 inch) baking tray, to cover the bottom of the tray evenly. Leave the rest of the batter to cover the top of the cake.
  4. Cut the strawberries in halves, or in fourths if they are really big. Put them into a bowl and add the other 3/4 cup of ground dates and 3 tablespoons of tapioca starch. Mix everything to cover the strawberries in starch.
  5. Transfer the strawberries mixture into your cake mould, on top of the batter.
  6. Take the rest of the batter and crumble it with your hands on top of the strawberries, to cover them evenly.
  7. Bake on 180 °C for around 40 minutes.

Notes

* To be able to slice this cake and make it look a bit more "tidy", it is the best to let it cool down completely after baking.

* For extra flavour and texture, you can serve this crumble cake in a bowl with some soy yoghourt and fruit compote or fresh fruits.
