Spelt and Oat Soda Bread
Here is a completely foolproof spelt and oat soda bread recipe for everyone who likes to keep it quick and simple without compromising the quality. This bread is easy to make and requires only natural ingredients.

To make this simple and delicious spelt and oat soda bread, you will need:
- whole grain spelt flour
- white spelt flour
- ground rolled oats
- sea salt or Himalayan salt
- coconut blossom sugar (optional, for more flavour)
- baking soda (bicarbonate of soda)
- apple cider vinegar, and
- water.

If you cannot find white spelt flour where you live, it is okay to use only whole grain instead. This soda bread recipe can handle small modifications like this. It can even work if the whole amount of flour here is spelt, instead of a spelt-oat combination.
However, I decided on using oats in this recipe as well. From my experience, these soda breads taste better if a combination of grains is used.
That way you won’t have one dominant flavour and texture that can sometimes feel a bit heavy (for example from spelt alone). Oats will also add some juiciness to the consistency of this soda bread, since they absorb a lot of water.
Baking and storing the spelt and oat soda bread
In most of my soda bread recipes, I like to bake the loaf at 180 °C for about fifty minutes, or an hour if the loaf is bigger. You will see that the bread is done by the colour on the surface of the loaf – it will turn golden brown.
Once the loaf is baked, take it out of the mould and let it cool down wrapped in a kitchen cloth. It will keep fresh for a couple of days if you wrap it in a cloth or a wax wrap (just avoid plastic, as this bread is pretty moist).

This spelt and oat soda bread can be combined in many delicious ways. Here are some ideas:
- try it with some homemade hazelnut butter and/or this amazing oven roasted plum jam without added sugar;

Ingredients
- 3/4 cup white spelt flour
- 1/2 cup whole grain spelt flour
- 3/4 cup ground rolled oats
- 3 pinches salt
- 2 tsp coconut or muscovado sugar
- 1 + 1/2 tsp baking soda
- 7-8 tbsp homemade apple cider vinegar + add water to have 1 cup of liquid.
Instructions
- Mix all the dry ingredients in a bowl.
- Pour the water and vinegar mixture in.
- Mix everything gently using a spatula or a whisk and transfer the batter into a bread mould.
- Bake at 180 °C for 50 minutes, or until its surface turns golden brown.
- Let the bread cool down wrapped in a cotton cloth.
